Easy Potato Soup with Fresh Herbs

January can be a tough month - itโ€™s no longer the holiday season, and spring is still a LONG way off. This time of year can truly feel like the bleak midwinter. One thing we can do for ourselves and our families during this season is make the ultimate comfort food - soup!


There are so many delicious soups to choose from, but this potato soup is a clear favorite. Itโ€™s so easy and quick, and the addition of fresh (or dried) herbs makes such a difference! Once the potatoes are chopped, it comes together in minutes, which makes it perfect for a simple weeknight meal.

You can serve this with a green salad and some good sourdough bread, but itโ€™s hearty enough to serve on itโ€™s own as well. If you have fresh herbs, use them, but dried herbs are fine too. Dried herbs have a stronger flavor, so just be sure to cut back on the amount.

Easy Potato Soup with Fresh Herbs

ingredients:

  • 8 medium potatoes, diced

    4 c. chicken broth

    1 onion, diced

    2 cloves of garlic

    ยฝ c. butter

    1/2 c. flour

    2 t. salt

    1 T. fresh thyme (or 1 t. dried)

    1 1/2 t. fresh rosemary (or 1/2 t. dried)

    black pepper, to taste

    3 c. milk

    bacon, optional

    cheese, optional

instructions:

  1. Dice potatoes (no need to peel) and simmer in the chicken broth until tender. Meanwhile, in a saucepan, saute the onion and garlic in the butter until onion is soft. Whisk in the flour, salt, pepper, thyme, and rosemary. Cook for 1 minute. Slowly whisk in the milk. Bring to a low boil and cook until thick, 1-2 minutes. Add mixture to potatoes and liquid, stirring to combine. Taste and adjust seasonings. Serve with crumbled bacon and cheddar cheese, if desired.
